Tasting Event to Spotlight Lake Superior Fish

Break out the Lake Superior Bluefin Caviar! Back by popular demand, "A Salute to Lake Superior's Sustainable Fisheries," a professional chef cook-off and public tasting event, returns to the McNamara Alumni Center on the University of Minnesota's Minneapolis campus on Tuesday, November 13, from 5 to 7:30 p.m. There, ten of the Midwest's finest chefs will compete for $1000 and public approval by turning Lake Superior's lake herring (a.k.a. cisco) into haute cuisine. Acclaimed Minnesota musician Michael Monroe will perform live music throughout the evening while attendees sample the results of the competition.

The one-night event hosted by the University of Minnesota Sea Grant Program spotlights the state's seasonal abundance of Lake Superior lake herring and celebrates the people involved in managing, harvesting, studying and preparing this sustainably harvested fish.

During the competitive part of the event, chefs like the Twin Cities' Paul Lynch of Fire Lake Grill House and Cocktail Bar will square off with Duluth's Scott Graden of the New Scenic Café and others who specialize in local foods, sustainable harvests, or seafood. The judges are Chef Don Miller, executive chef at the University of Notre Dame, 2011 "Salute" winner Chef Ron Bohnert of Danny's Bar and Grill in Stillwater, and celebrated Twin Cities food critic Dara Moskowitz Grumdahl.

The Salute involves fishery experts, chef awards, door prizes, a silent auction, and much more. Event sponsors include Dockside Fish Market, Minnesota Zoo's Fish Smart Program, and the Minneapolis-St. Paul Magazine.
